Coconut
milk yogurt
Ingredients:
3/4
tsp agar agar powder (you can find this at a health food store)
1-1/2
Tbsp organic sugar cane
2
cans full fat Coconut Milk
3Tbsp
Tapioca flour
Probiotic capsules
Directions:
••Very Important - Don't
make substitutions, do not alter measurements. Use only canned full fat coconut
milk. Follow the recipe exactly for guaranteed results. ••
1.
In
a small bowl, mix tapioca starch with 1/2 cup water to make slurry. Set aside.
2.
Add
2 cups filtered water to a large pot. Sprinkle the agar agar powder over
surface. Bring to a boil and gently simmer 3-5 minutes or until agar agar is
completely dissolved.
3.
Give
tapioca slurry a good stir and whisk it and the sugar into the agar agar
mixture
4. Return to simmer, stirring constantly 1-2 minutes.
5.
Which
in coconut milk. Heat just until steam rises from surface.
6.
Allow
milk to cool to 95 to 100 F. It takes around 45 minutes.
7.
Sprinkle
around 30 billion CFUs (Colony Forming Units -live bacteria) over surface of cooled milk
and whisk very well. Transfer to containers and then to yogurt maker. Turn on
yogurt maker and leave undisturbed for 8-10 hours. When time is up, move to
refrigerator and chill for 6-8 hours. Yogurt will set as it cools.
**I add this to my overnight oatmeal (recipe to follow) or add homemade jam and stir. In addition you could substitute this for sour cream in a pinch - Yum!
