Game On Diet Stir Fry

Tonight's dinner was stir fry - yum! I started cutting veggies; mushrooms (2), one slice of onion, 1-1/2 stalks of celery, 5 small peppers and 2-1/2 florets of broccoli. Placed a small amount of avocado oil in a warm saute pan over medium heat. Threw in the veggies and 1 clove of garlic. Steamed the veggies while I warmed up the quinoa. Once everything was al dente I threw in some previously cooked garlic chicken just to warm it up. Threw everything into a bowl tossed with a 1 tsp of soy sauce. I thoroughly enjoyed this dinner and it was quite filling.
