For lunch, I took 1/3 of Costco's 7 Superfood Salad and I added diced peppers, 3 artichoke hearts, a palm size of Costco's canned chicken and a fist size of quinoa. Then I added 2 teaspoons of balsamic vinegar for my dressing. This was very flavorful.
The previous day I had taken the same salad but I had made the dressing that is in the book. I will worn you it is powerful.
1 clove of garlic
2 Tablespoons of balsamic vinegar
1 teaspoon of flaxseed oil
I bit into my salad and WOW - the garlic gave it a great punch. But when students came in they noticed the garlic smell, so I decided that I better tone it down while I am at school.
