I found a good way to use up ripe avocados by making dairy free chocolate avocado pudding. You can't taste the avocado but it makes it creamier and richer. We like it with a little whipped topping mixed in.
Ingredients:
2 cups unsweetened coconut milk (boxed)
2 ripe avocados, peeled and pitted (without any brown discoloration)
1/3 cup plus 1 Tablespoon unsweetened cacao powder or cocoa powder
5 Tablespoons of sweetener (agave nectar or pure maple syrup)
2 teaspoons vanilla extract
I threw everything into my Vita-Mix and blended until it was smooth.
Then I transferred the pudding into small glasses and also made fudge popsicles with the left over. Popped these into the freezer for later consumption.
